The beautiful photography in this book makes me want to eat better. These vegan rainbow dishes look appetizing and filling, plus who doesn’t love a one-dish meal? I am what I call a lacto-evo-vegetarian or flexitarian. I eat dairy and eggs, and occasionally meat, but not a lot of it and only really fish and some beef, chicken and turkey. Meat freaks me out on the regular, so this book is full of great ideas for dishes I think my whole family will enjoy!
